The Redding Roadhouse re-opened July 5 under new ownership.
Ted Stonbely, who grew up in Redding and now lives in Weston with his wife and co-owner Colleen, bought the restaurant with Karen Cook and her husband Wirt Cook, the new executive chef.
“We loved its reputation, the bones of the building are fantastic, the clientele is great, and we’re looking to expand for more families and bringing more locals in,” said Mr. Stonbely. “We want to expand our clientele down to the Westport area. We want to get people excited for what [The Roadhouse] used to be and what it will be in the future.”
Ownership changed over on Monday, July 2. The restaurant was closed for several days before re-opening on July 5.
“The music is continuing, the outdoor seating is continuing, we’re painting the outside and doing aesthetic and cosmetic changes inside,” Mr. Stonbely said. “The menu has already changed and will continue to be in flux.”
The Redding Roadhouse’s menu offers “modern American casual dining, utilizing local ingredients when possible and seasonal items. We’ve re-visioned some of the classics that used to be done here,” said Mr. Stonbely.
The restaurant was previously owned by chef Mike Roberts, his wife Doris Roberts, and Lou Maco.
